The crystallised jelly or วุ้นกรอบ (TH) is a traditional Thai sweet that is quite similar to the Japanese sweet wagashi.
The key ingredients of our Crystallised Jellies are high quality agar-agar powder, which makes the the firm texture, while sugar is the main ingredient to preserve it. We have developed an amount of sugar that creates a subtle sweetness in all our desserts that customers can enjoy with a cup of tea.
Traditionally, this jelly is seen in small dice shapes in bright colours. It has recently become popular again in social media among young Thais. The final process of making it can be done by sun-drying or leaving at room temperature for 2-3 days until the sugar becomes crystallised and creates a crispy texture outside, leaving inside chewy. However, this method is a long process which London’s weather does not allow us! We use a dehydrator machine to dry them overnight. Using this tool gives them a perfect crystal coat and ensures they are totally hygienic.
These jellies can be a delightful addition to events such as baby showers, brunches, afternoon teas or chilled nights in with friends.
